What do you get if you roast a pumpkin snake?
Over 40 cups of pumpkin. Yikes.
In an effort to be budget conscious and use the food I have, this year instead of throwing out our carved Halloween pumpkins, I roasted them. They were beautiful, small, pie pumpkins and I just couldn't throw them out knowing they were the tastiest kind.
And so, last night, I make two kinds of pumpkin soup.
This morning I made pumpkin scones.

That snake is amazing. It looks fabulous. And dealing with 40 cups of pumpkin is a big job. Looks like a memorable halloween.
